Recipes Stewed Okra with Chicken & Sausage

Stewed Okra with Chicken & Sausage

This delicious southern classic is easy to make a packed with flavor. The okra is an underutilized vegetable but soars as the star of this dish. The chicken add a layer of spice while the sausage serves as the necessary bite for a well balanced meal. Served over white rice this meal will become a house favorite in no time!

Stewed Okra with Chicken & Sausage

 

Ingredients – serves 2

         -4 wings or 8 drummettes

         - 2-3 cups of frozen cut okra, Picsweet

         -1/4 yellow onion, diced

         -1 tsp garlic paste

         -1 tsp tomato paste

         -1 cup chicken stock

         -½ tsp lobster bouillon

         -8-12 oz smoked sausage, sliced

         -Seasonings: creole seasoning, Kinders The Blend, Cayenne pepper

 

 

 

Directions

1.   Season and sear chicken wings in saucepan over medium heat until browned and set aside.

2.   In the same pan, add diced onion and okra, cook down for 5-8 minutes until softened.

3.   Add garlic paste, tomato paste, lobster bouillon and chicken stock, season and stir. Bring to simmer.

4.   Add chicken wings back in, reduce heat, cover pan and simmer 10-15 minutes to reduce stock to half.

5.   Slice smoked sausage and add to saucepan, cook an additional 8-10 minutes.

6.   Serve over white rice.
